how do I fix the cranked crown ridge to the sheets as it is not advised to fix 2 thickenesses together and I have no extra purlins at the top to devote to the ridge itself ?

You should be able to fix the ridge directly onto the sheets below, rather than needing to fix straight through both of them.

This would be suitable for a garage, the maximum purlin centres going down the roof would need to be 1375mm to keep it supported.
